Granny's Rice Krispe Cookies

These are AMAZING!!! My grannie use to make them every year for Christmas.

Grannie Cookies
- 2 egg whites
- 1 cup brown sugar
- pinch salt
- 1 tsp. vanilla
- 2 cup Rice Krispies
- 1 cup chocolate chips
- 1/2 cup nuts (optional)

DIRECTIONS
Heat oven to 250 degrees F. In a very clean metal mixer bowl, beat egg whites until they are very dry and hard peaks. Add very slowly while beating the brown sugar and salt. Bear in add add vanilla. Continue beating and add Rice Krispies. Stop beating and fold in chocolate chips and nuts. Spoon on a greased cookie sheet by heaping teaspoons. Bake at 250 degrees F for 45 minutes. Cool; store in an airtight container. Do not double the recipe.

Rollo Cookies

Rollo Cookies

Cream together...
- 1 cup of butter (softened)
- 1 cup white sugar
- 1 cup brown sugar

Add this to the creamed mixture...
- 2 eggs
- 2 tsp vanilla
- 2 1/2 cups flour
- 3/4 cup cocoa
- 1 tsp. baking soda

Directions
Take one unwrapped Rollo and put it in each cookie. Cover the Rollo with dough and roll into a ball. Roll the ball in sugar until coated. Bake at 350 degrees F for 10-12 minutes, (10 minutes is my favorite). Be sure to make sure you don't over cook them, because the dough starts out brown. Once cooked let them sit on the cookie sheet for about 1 minute to cool, then remove and place them on a brown paper sack, wax paper, or a cool greased cookie sheet, so the carmel doesn't leak out of the cookies
