Muddy Buddies

Muddie Buddies

- 9 cups Chex (any flavor)
- 1 cup semi-sweet chocolate chips
- 1/2 cup peanut butter
- 1/4 cup margarine or butter
- 1 Tbsp vanilla
- 1 1/2 cups powdered sugar

DIRECTIONS
Pour cereal into a large bowl. Set aside. In a large microwave safe bowl combine chocolate chips, peanut butter, and margarine. Microwave on High for 1 to 1 1/2 minutes or until mixture is smooth. Stir after 1 minute. Stir in Vanilla. Pour chocolate mixture over Chex and stir around until all pieces are evenly coated. Then pour powdered sugar over the chocolate covered cereal and place lid on bowl and mix around until all cereal is covered with powdered sugar, let cool, then eat.

Homemade Chicken Strips

Homemade Chicken Strips

- Chicken tenders (however many you feel like eating)
- Ground up Rice Kripies, Corn flakes, Chex (its your choice which you use, and then grind up enough to coat the amount of chicken tenders you are using.)
- 1/2 cube to 1 cube melted butter
- seasoning salt to taste in the ground chicken coating.

DIRECTIONS

Heat oven to 375 degrees F. Wash the chicken tenders, then dip them in the melted butter so that they are covered with butter. Then place them in the groud chicken coating, and roll them around until they are fully coated. Place them on a foil covered cookie sheet and bake in the oven for about 30 minutes.

Granny's Rice Krispe Cookies

These are AMAZING!!! My grannie use to make them every year for Christmas.

Grannie Cookies
- 2 egg whites
- 1 cup brown sugar
- pinch salt
- 1 tsp. vanilla
- 2 cup Rice Krispies
- 1 cup chocolate chips
- 1/2 cup nuts (optional)

DIRECTIONS
Heat oven to 250 degrees F. In a very clean metal mixer bowl, beat egg whites until they are very dry and hard peaks. Add very slowly while beating the brown sugar and salt. Bear in add add vanilla. Continue beating and add Rice Krispies. Stop beating and fold in chocolate chips and nuts. Spoon on a greased cookie sheet by heaping teaspoons. Bake at 250 degrees F for 45 minutes. Cool; store in an airtight container. Do not double the recipe.

Huckelberry Muffins

Huckleberry Muffins

- 1 cup sugar
- 1/2 cup butter
- 2 eggs
- 2 cup flour
- 1/4 tsp. salt
- 1 1/2 tsp baking power
- 1 cup milk
- 1 cup washed and drained huckelberries
- 1 tsp. vanilla

DIRECTIONS
Cream butter, sugar and eggs in a large bowl. Mix dry ingredients together. Add flour to creamed ingredients, alternating with the milk. Add vanilla. Mix well, scraping bowl. Fold in huckelberries. Put 1/4 cup batter into paper-lined muffin tins. Bake at 350 degrees F for 25-30 minutes. This batter will keep for several days in the fridge.

Banana Bread

The most delicious banana bread ever!!!

Banana Bread
-1 cup sugar
- 1/2 cup oil
- 2 eggs
- 1 cup mashed bananas
- 1/2 cup sour cream
- 1 tsp vanilla
- 1 1/2 cup flour
- 1 tsp soda
- 1/2 tsp salt

DIRECTIONS
Heat oven to 350 degrees F. Grease and flour the bottom only of a 9x5 loaf pan. In a large boal, beat together sugar and oil. Add eggs, bananas, sour cream, and vanilla; blend well. Add flour, soda, and salt. Stir just until dry ingredients are moistened. Pour into pan and bake at 350 degrees F for 50 to 60 minutes. Check with toothpick. Cool 5 minutes in pan then remove. Makes 1 loaf.

Dr. Pepper Cake

This is a very good cake, it is also very moist and stays that way for several days. Here's the recipe.

Dr. Pepper Cake

- 1 cup butter or margarine (butter is better)
- 1 cup Dr. Pepper
- 2 cups unsifted all purpose flour
- 1 1/2 cups sugar
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 pinch salt
- 4 Tbsp cocoa
- 2 beaten eggs
- 2 tsp vanilla
- 1/2 cup buttermilk
- 1 1/2 cup miniature marshmallows

Dr. Pepper Frosting

- 1/2 cup Dr. Pepper
- 1/4 cup butter or margarine
- 3 Tbsp cocoa
- 3 cup powered sugar
- 1/2 cup chopped pecans (optional)
- 1 tsp vanilla

DR. PEPPER CAKE DIRECTIONS
Melt butter, add Dr. Pepper and mix together well. Mix all dry ingredients together in a large bowl. Add eggs, buttermilk, vanilla, and marshmallows together. The pour the Dr. Pepper butter mixture over the rest of the ingerdients in the bowl, mix them together well. Pour batter into a greased 9x12 pan. Bake at 350 degrees F for 30-35 minutes.

DR. PEPPER FROSTING DIRECTIONS
Heat Dr. Pepper, cocoa, butter or margarine, but don't bring to a hard boil, then remove from heat. Stir in the rest of the ingredients and mix together well. Spread the Dr. Pepper frosting over the cake while still hot. Let cake cool after frosting and then serve.


Cinnamon Bread

Cinnamon Bread

- 3 Tbsp yeast
- 1/2 cup sugar
- 4 eggs lightly beaten
- 3 3/4 cup warm water
- 4 1/2 tsp salt
- 3 Tbsp oil
- 2 1/2 cup cinnamon chips
- 11 to 12 cups flour

DIRECTIONS

In a large bowl, combine 4 cups flour, yeast and sugar. Add water, eggs, and oil. Beat well to a cake batter like consistency. Stir in salt and cinnamon bits, add 7 more cups of flour to make a bread dough consistency. This is a soft dough.

Mix dough to the right consistency and add an extra cup of flour if needed. Place dough in a greased bowl, cover and let rise for 1 hour.

Shape dough into 4 loaves. Let rise for 1 more hour.

Bake at 375 degrees F for 30 minutes. Let cool for a few minutes and then run a knife around the pan and tip the pan upside down and let loaf fall out onto a cooling rack to cool.

Rollo Cookies

Rollo Cookies

Cream together...
- 1 cup of butter (softened)
- 1 cup white sugar
- 1 cup brown sugar

Add this to the creamed mixture...
- 2 eggs
- 2 tsp vanilla
- 2 1/2 cups flour
- 3/4 cup cocoa
- 1 tsp. baking soda

Directions
Take one unwrapped Rollo and put it in each cookie. Cover the Rollo with dough and roll into a ball. Roll the ball in sugar until coated. Bake at 350 degrees F for 10-12 minutes, (10 minutes is my favorite). Be sure to make sure you don't over cook them, because the dough starts out brown. Once cooked let them sit on the cookie sheet for about 1 minute to cool, then remove and place them on a brown paper sack, wax paper, or a cool greased cookie sheet, so the carmel doesn't leak out of the cookies

Twice Baked Potatoes

These are delicious!!! One of my most favorite things to eat! Anyways here is the recipie....

TWICE BAKED POTATOES

- 8 medium potatoes, BAKED
- 2 Tbsp butter
- 1 cup Sour Cream
- 2 1/2 cups Cheddar Cheese, shredded
- 1/4 cup heavy cream (you could also just put in an extra 1/4 cup milk)
-1/2 cup milk
- Salt and pepper and other seasoning to taste.
- 4 strips of bacon, cooked and diced. (Optional)
- 3 green onions finely chopped (Optional, I don't like onions in mine)

DIRECTIONS

Slice off top 1/3 of each potato lengthwise. Hollow skins, leaving 1/4" of the potatoe inside. In a bowl, mash together potato interior, butter, sour cream, 1/2 cup cheese, heavy cream, milk, salt and pepper other seasonings. Stir in bacon, and (onions). Fill each skin with mixture and top with the remaining cheese. Bake at 350* F for 15 minutes.
